I have noticed this too Ciaran, if you have a hole or a patched up door foam sound deadening stuff, it transmits far more noise. I think Dean found a good supplier of this foam for his XM rebuild. I think he also added extra sound deadening around the car too. So that would be very interesting to see if it is quieter at speed.
Another car I was surprised by in terms of road comfort was an Ami 6. Very soft indeed, infact something softer than a DS. Not quiet though.....

In the Xantia at least i know the ES9 is quite good at 140(!) and at anything upto 110 there isnt much engine noise that comes into the cabin so the XM would be even better as it has less wind noise due to reduced drag

Ciaran, the one I'm contemplating is STP Hood Solution but I don't know if something on the bonnet only would do wonders or not. Certainly less than a full solution but still, how much?

I didn't find mine noisy Ciaran, I would say its at least as quite as the C5 - but then I rarely drive above 60mph

Try using rustproofing wax on the inside of the panels, it makes a surprising difference.

Fitting dynamat or similar does make a huge difference to noise levels, doors and front bulkhead and floor. I've done it to a W124 Merc and to my Allard (that was fun). Oddly, at motorway speeds I think the 2.1 manual diesel is pretty refined.
